Roasted Peaches
Split ’em in half, remove the pit, then, with skin sides up, place the peach halves onto a baking sheet covered with parchment paper. 20 minutes at 400 degrees, and you’ll experience true summer lovin’. I do this in my toaster oven, so I don’t heat up the whole house. One could add cinnamon and butter, but I dig ’em naked. A chiffonade of basil would brighten the dish, especially if you add a milky component like ice cream or a swirl of fresh whipping cream.

Soup? Is she high? Over Independence Day weekend, I served this to a crowd, and they were wowed. It’s bright and light, elegant and fresh. It’s gluten-free too.

One of my all time faves, I adore the Nectarine Blueberry Buckle. If you need to bring something to someone’s home, bring this.

Tuna Tartare
Again, carb-free, unless you serve these on good quality potato chips.

Savory Compote to Accompany Anything
It’s awesome on its own. As a side dish, on a salad, and especially served with fish.
